Peanut Butter Rice Crispy Treats

One of the easiest, no-bake treats you will ever make!

Makes 1 - 9"x13" pan. Takes approximately 20 minutes from start to finish with 1 additional hour for setting time.

I need more ease in my life as of late. With a baby and a toddler at home, my life has taken a drastic turn from just a few years ago. Gone are the quiet evenings and leisurely weekends, and in comes the chaos, potty training, and chronically running behind.


This dessert is exactly what my life requires right now. It's no-bake, only a few ingredients, but most importantly, everyone loves these treats! Sure the toddler enjoys them, but my husband is the biggest fan of all. Give it a try!

 

Ingredients:

  • 6 tbsp unsalted butter

  • 3/4 cup creamy peanut butter

  • 1 - 10oz bag of mini marshmallows

  • 1/2 tsp vanilla extract

  • 1 scant pinch of kosher salt

  • 6 cups rice crispies

  • 1 cup fresh chocolate chips

 

Directions:

  • Using a large pot, add in butter, peanut butter, and marshmallows over med-low heat.

  • Stir regularly to keep the mixture from burning.

  • Once it is smooth and creamy, remove from heat, quickly add in vanilla and salt, stir.

  • Add in rice crispies, combine well.

  • Pour the mixture into a greased 9"x13" pan.

  • Press down firmly with a silicone spatula until it is even and smooth in the pan.

  • Melt chocolate chips in the microwave being carful to only heat it 15 seconds at a time to avoid burning the chocolate. ***Important note, be sure to use fresh chocolate chips, not old ones, see picture below for the difference. Old chocolate chips will not melt smoothly.***

  • Pour on the melted chocolate and spread it with an offset spatula.

  • Let them sit for at least an hour (if everyone can wait that long). I also slice them up into bars and freeze about half. Then I can gradually get them out of the freezer as we want them. They are still great and very chewy.

 

As you can see, one very simple and hassle-free dessert that is still tasty! These bars are just the thing for a busy life. Enjoy, friends.
